home made soup

This is a little side kick from the earlier post.

When you have to deal with these sheer, incredible quantities of tomatoes on a regular basis you quickly run out of things to cook. One of our favourite recipes for home made tomato soup was this one, last year.

1 onion
1 clove of garlic
500 g tomatoes (cut in half or quartered)
200 g feta cheese
salt & pepper to season
fresh basil leaves

You chop the onion and garlic and heat sweat them in a bit of olive oil for bout 4-5 minutes. Then add the tomatoes and cook them on a low heat until they soften and start falling apart. Crumble up half of the feta cheese and add to the tomatoes. Keep cooking until you have a creamy rich consistency. The tomatoes should still be chunky in the soup. Season with salt and pepper.

Just before serving add the second half of the feta and the chopped up basil leaves, stir and serve.
